This tea is arguably the finest of Chinese oolongs, with competition-grade varieties selling for thousand of dollars a pound. This tea is amazing when you prepare it well. The water should be just a little bit hotter than what you normally use for green tea. If you use boiling water, pour some cold water (about 1/2 inch for a 12 oz. cup). The official preparation time is 3-4 minutes - to me it ttasted best when it was nearly 4. When it'a done right it has this multidimenional taste, the liquid itself feels like it has volume, and this is when is delicate sweetness comes out. Enjoy your tea!
